S'mores Cookie Bars

S'mores Bars are a super easy dessert recipe or sweet after school snack recipe to make and only require 7 pantry staples as long as you keep graham crackers and mini marshmallows in the cupboard. These Cookie Bars are delicious sweet treat at summer potlucks, barbecues and a favorite to snack on during 4th of July fireworks. 

S'mores Cookie Bars are a great use for broken graham crackers you might find in the pantry and don't know what to do with.

Sometimes life calls for something ooey gooey, chocolaty, marshmallowy easy S'mores Cookie Bars for dessert. I have the perfect treat for you! S'mores Ooey Gooey Chocolaty Marshmallowy Graham Cracker Cookie Bars.Whew that was a mouthful!

We randomly make these through out the year, especially around Christmas since they are great to bring to any gathering and loved by young and old alike. They are so very easy to make and never last long! Lorna was asking to make a treat last night when I came home from my Doctor's appointment and these were the perfect easy solution since they didn't require any additional help and make very little mess.

Oh and did I mention these fulfill every s'mores craving you'll ever have without even needing a fire pit.

Ooey Gooey Chocolaty Marshmallowy S'mores Heaven in a bar!

Broken Graham Crackers and Brown Sugar in a bowl.

In a large bowl combine:
  • 2 sleeves Graham Crackers broken into medium/small sized crumbs
  • 2/3 cup Packed Brown Sugar

Stir until well combined. 

Mini Marshmallows, Chocolate Chips and Broken Graham Crackers in a bowl for S'mores Cookie Bars.

Add: 
  • 3 cups Mini Marshmallows
  • 2 cups Chocolate Chips.
I usually use semi sweet but dark chocolate chips make for a very tasty s'more.

A tablespoon Vanilla Extract being added to butter in glass measure cup.

Melt 2 sticks butter and stir in:
  • 1 tablespoon Vanilla Extract
  • 1 pinch of Salt 
Mix until well combined.

Vanilla Butter mixture being drizzled into broken graham cracker mixture with marshmallows and chocolate chips.

Drizzle butter over graham cracker mixture while stirring. Mix until well combined.

S'mores Cookie Bar mixture in a bowl.

Pour S'mores mixture into a 9"x13" buttered baking dish.

For the easiest removal line buttered 9"x13" pan with parchment paper and butter parchment paper.

Spread S'mores Cookie Bar mixture evenly in bottom of pan.

Allow S'mores Cookie Bars to cool and cut to desired size.

My kids LOVE s'more and these bars will be very popular in my house! I haven't yet to made non baked bars and I'm so intrigued to try this recipe!

Finally! A S'more bar recipe that leaves out the all purpose flour! Too many recipes add cookies - a.k.a. MORE flour - into flour, which is redundant too much flour. This is the first S'more/Crushed graham recipe without the extra flour! Thanks for sharing.

Hi Ayet. Sorry this took me so long to respond. I couldn't find and answer but it's close to a cup of crushed graham crackers per sleeve. This recipe doesn't have to be exact. I'm sorry if that doesn't help. Have a wonderful day.
