I made Chipotle Ham and Bean Soup in the Crock Pot before heading to church Sunday morning. I needed something easy and worry free.. I knew we had a large windstorm on the way, I am just thankful we didn't lose power.
There's nothing I love more then a satisfying Ham and Bean Soup at the end of a cold, wet and windy day, other than maybe a hot bath and a slice of Caramel Dutch Apple Pie.
If I can have all 3 I am one happy Momma!
Crock Pot Chipotle Ham and Bean Soup is a great use for leftover ham from the holidays but also an inexpensive soup made with a good quality smoked ham hock. I tried to keep this recipe simple and inexpensive because I understand so many families are on tight budgets but love flavorful and filling recipes. The chipotle pepper adds a little heat and extra smokiness to the soup.
I freeze the extra chipotle peppers and adobo sauce individually in small plastic bags for later, since I seldom use more then 1 or 2 peppers at a time.
A few more favorite chipotle dishes are Chipotle Chicken Sweet Potato Chili and Chipotle Black Beans. Incase you need a few ideas on what to make with your left over chipotle peppers. Both are delicious and healthy meals.
Here's how to make my favorite Ham and Bean Soup Recipe.
Sort 1 pound Dry Navy Beans or Great Northern to remove pebbles, shriveled or broken beans.
Soaked beans covered with at least 2" of water.
To a Crock Pot add:
Soaked Beans
3 pounds Meaty Ham Bone or Smoked Ham Hock
1 whole Medium Onion, Chopped
4 ribs Celery, Chopped
5 whole Carrots, Chopped
5 cloves Minced Garlic
1 whole Chipotle Pepper In Adobo Sauce, Chopped (Feel Free to add more if you want a spicier soup.)
1 tablespoon Adobo Sauce from Chipotle Peppers or more for spicier soup
Place all ingredients in the Slow Cooker and cook on low for 8-10 hours or until beans are cooked and tender. Once beans are cooked until tender add salt to taste if needed.
Ham and Bean Soup Freezes really well if you happen to have extra or make a double batch.

I just made this today and LOVED it! I've been making bean soup the same way for years and thought I'd try something different. I'm not usually one to mess with a good thing, but I'm glad I did! One thing is for sure, I am always making bean soup in my slow cooker from now on. Great recipe, thanks for posting!
Hi, If you have a large pot you can add all the ingredients to the pot and bring to a simmer. Once simmering, cover pot and reduce heat to low. It will need to cook from 4-6 hours or until the beans are tender!
Visiting on a link from eat8020.com. I decided to make this soup for lunch today using what I had on hand -- black beans and some bacon and ham leftovers -- and it turned out delicious. Will definitely fit this in to our winter supper rotation.
Oh man alive! This recipe is awesome. I wanted a little more spice so I used two peppers and it was perfect for us. This is going to be one of my favorites and thank goodness it is so easy. I spent all day working from home breathing in the wonderful scent until finally dinner time. Work is done, Dinner was awesome and I'm one happy mama.Thanks a bunch!
Hi Chrissy! Yes you chop the ham. If I use a ham hock I cook it in the soup and then remove it and chop it. If I use ham I just add the leftover chopped ham and throw the bone in the pot!
Hi, You could quick soak the beans by placing them in a pot of water and bringing it to a boil and then turning it off and let them rest for an hour before draining. I haven't tried making this recipe without soaking the beans first but you could try just adding them and cooking all day, make sure not to add any salt until after the beans are tender or they may stay hard. You're supposed to chop up the ham, right?

What happens if you don't have time to soak the beans overnight? Can the beans be added raw the morning of and cook all day?
Hi, You could quick soak the beans by placing them in a pot of water and bringing it to a boil and then turning it off and let them rest for an hour before draining. I haven't tried making this recipe without soaking the beans first but you could try just adding them and cooking all day, make sure not to add any salt until after the beans are tender or they may stay hard.
