For this weekends Sunday Supper we are gathering recipes to throw the ultimate pool party. We all know a good pool party requires something light, and refreshing to sip on while your hanging out at the pool so I decided to share Spiked Blackberry Lemonade, since it's the perfect summer sipper.

I made a triple batch of Blackberry Lemonade for Colt's 40th Birthday last weekend and then spiked a few for the guest.

I made this recipe in 2 steps with the Blackberry Lemonade in one part and then spiked it in step 2 incase you have company looking for a nonalcoholic version.

With blackberries ripening early this year the kids have been out picking away already so Blackberry Lemonade has been a daily staple in the fridge!

I know you'll love these spiked or un-spiked as much as we do.

Here's how to make homemade Blackberry Lemonade:

Sugar and water in a small saucepan.

To make a simply syrup to sweeten Blackberry Lemonade in a small saucepan stir together:
  • 1 1/3 cup Granulated Sugar
  • 1 1/3 cup Water

Simple Syrup in a small saucepan for Blackberry Lemonade.

Cook over medium heat until sugar dissolves and mixture becomes clear.
Set aside.

Blackberries and Water in a blender.

In a blender puree 3 cups Blackberries with 1 cup Water.

Blackberry puree in a blender.

Love the gorgeous bright red color of the blackberry puree!

I strained out the seeds from the blackberry Puree, but you could always leave them in. I prefer the smoother texture.

A pitcher filled with sugar syrup, pureed blackberries, lemon juice, water, and ice for Blackberry Lemonade.

In a large pitcher stir together:
  • Sugar Syrup
  • Strained Pureed Blackberry Mixture
  • 1 cup Lemon Juice
  • 2 cups Water
  • 3 cups Ice
Stir together until well combined and cold.

The Blackberry Lemonade can be enjoyed at this point or made into a cocktail in the next step.

Spiked Blackberry Lemonade being shaken in a shaker jar.

To make the Spiked Blackberry Lemonade fill a cocktail shaker with:
  • 2/3 of the way full of Ice
  • 2 shots of Vodka or liquor of choice Whisky would be good too
  • 1 1/4 cups Blackberry Lemonade

Shake until well combined and icy cold.

Spiked Blackberry Lemonade with vodka being poured into glass.

Pour Spike Blackberry Lemonade into your favorite cocktail glasses to enjoy!

Blackberry Lemonade spiked with a shot of vodka is a favorite summertime cocktail or serve virgin for a refreshing drink from Serena Bakes Simply From Scratch.

Garnish glass with a Lemon Wheel and Blackberries and sip away.

I love the color. Blackberries had a great season here in Missouri. As big as your thumb! I'll have to give this a try!
