Strawberry Rhubarb Cobbler

Strawberry Rhubarb Cobbler recipe is super simple to make and no rolling required from Serena Bakes Simply From Scratch.

I went in search of rhubarb a few weeks back to make this Strawberry Rhubarb Cobbler, but it was too early. So when Colt spotted rhubarb at the grocery store last week he lit up like a kid in a candy store, and reminded me of my promise to make him a Strawberry Rhubarb Cobbler.

This is such an easy recipe and the original comes from a very long time close friend Rachelle. I go into a little more detail about our friendship in the Blackberry Cobbler Recipe. It's one of those keeper recipes that you will always cherish. 

Its a long time favorite recipe in our house and I hope it becomes one in yours. 


Strawberry Rhubarb Cobbler with fresh strawberries and rhubarb.

Slice 3 cups Rhubarb and 3 cups Strawberries. 

Strawberry Rhubarb Cobbler is best when made with really ripe strawberries. It will help naturally sweeten the cobbler.

Add 1/2 cup Granulated Sugar, and 3 tablespoons All-Purpose Flour. Stir until well combined.

Spread strawberry rhubarb mixture evenly across the bottom of an 8"x11" pan. Set aside.

In a mixer or medium sized bowl add 1 cup All- Purpose Flour, 1 cup Granulated Sugar, and 1 teaspoon Baking Powder.

Add 1 teaspoon Lemon Zest, and stir until well combined. I like to run the mixer for about a minutes to really infuse the mixture with lemon essence. I just adore the way lemon goes with the strawberry and rhubarb filling.

Make a well in the center of flour mixture. Add 1 whole Egg, and 1 teaspoon Vanilla Extract.

Mix on medium-low speed or with a fork until mixture becomes extremely crumbly, and egg is no longer visible.

Spread Strawberry Rhubarb Cobbler topping over the top of berries.

Spread cobbler topping evenly over berries.

Spread Strawberry Rhubarb Cobbler topping over the top of berries and drizzle with butter.

Drizzle with 1/2 cup Melted Salted Butter evenly over the top.

Bake in a 375° oven for 45-55 minutes, or until golden brown on top.

ingredients:

Strawberry Rhubarb Filling
  • 3 cups Strawberries, Stems Removed and Sliced
  • 3 cups Rhubarb, Sliced
  • 1/2 cup Granulated Sugar
  • 3 tablespoons All-Purpose Flour
Cobbler Topping
  • 1 cup All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Lemon Zest
  • 1 whole Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1/2 cup Salted Butter, Melted

How to cook Strawberry Rhubarb Cobbler

  1. Preheat Oven to 375°.
Strawberry Rhubarb Filling
  1. Mix all ingredients together until well combined. Spread evenly in a 8"x11" pan. Set aside.
Cobbler Topping
  1. In a mixer or medium sized bowl combine flour, sugar, baking powder, and lemon zest. Mix on medium-low speed or by hand until the dry ingredients are infused with the lemon zest.
  2. Make a well in center of dry ingredients. Add egg, and vanilla. Mix on medium-low speed or using a fork until egg is very well combined and no longer visible. Mixture should look like small crumbs.
  3. Spread crumb mixture evenly over the top of strawberry rhubarb filling. Drizzle evenly with melted butter.
  4. Bake for 45-55 minutes until golden brown.
