Peaches are at their peak of perfection at the moment, and I couldn't think of a better way to use up the bounty of sweet juicy peaches than a Easy Peach Cobbler.

There is a lot of different variations to Peach Cobbler some are made more like a pie. Some have a biscuit or dumpling style topping. Sometimes the filling peaks through the topping, and sometimes it's completely covered.

This cobbler is so easy to make. The fruit is completely covered for the most part with a crispy crunchy sweet crust, but is soft and buttery underneath.

It's about as easy to make as the recipes using a cake mix. It uses basic kitchen staples that most cooks already have on hand.

Here's how it's made...

Mix together until well combined:

  • 6 cups Peaches, Peeled and Diced
  • 2 tablespoons Sugar Or To Taste
  • 2 tablespoons All-Purpose Flour
Tips: You can use frozen peaches instead of fresh when needed. 

Adjust sugar as needed. I used 2 tablespoons sugar, and probably could have skipped sugar all together, because the peaches were so ripe. Sometimes it might require a 1/4 cup - 1/3 cup of sugar when the peaches aren't as ripe. It also depends on how sweet you like the filling.

Spread peaches evenly in a 8"x11" Deep Pan. Set aside.

Easy Peach Cobbler Recipe mix together flour, sugar, baking powder, salt, add egg, vanilla, and almond extract from Serena Bakes Simply From Scratch.

In a mixing bowl stir together until well combined:
  • 1 cup All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
Make a well in the center of flour mixture and add:
  • 1 whole Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 teaspoon Pure Almond Extract (optional)
Mix together with a fork, until mixture is extremely crumbly, and egg is no longer visible. Alternatively you can combined everything in a stand mixer, and mix until crumbly. I do it both ways depending on my mood. It's fairly easy either way.

Bake in a 375° preheated oven for 45-55 minutes until crust is golden brown, and filling is bubbly.

ingredients:

Peach Filling
  • 6 cups Peaches, Peeled and Diced

Cobbler Crust
  • 1 cup All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 whole Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 teaspoon Pure Almond Extract
  • 1/2 cup Butter, Melted

instructions


  1. Preheat over to 375°.
Peach Filling
  1. Mix together all ingredients for peach filling, until well combined.
  2. Spread peaches evenly in the bottom of a 8" x 11" deep pan. Set aside.
Cobbler Crust
  1. Mix together flour, sugar, baking powder, and salt, until well combined.
  2. Make a well in the center of flour mixture. Add egg, vanilla, and almond extract. 
  3. Use a fork or mixer to mix together, until egg is no longer visible, and mixture is extremely fine.
  4. Evenly spread the mixture over the top of peaches.
  5. Drizzle the top evenly with butter.
  6. Bake for 45-55 minutes, until top of cobbler is golden brown, and peaches are bubbly around the edge. Crust should be cooked through if poked with a toothpick.
  7. Serve warm or at room temperature with a scoop of ice cream or sweetened whipped cream.

  1. This was the best cobbler! I have tried other recipes but this was our favourite because it was crunchy on top. I used tinned peaches and it turned out perfectly!

  2. This is not the easiest. The easiest is: 1 cup pioneer baking mix. 1 cup sugar. 1 cup milk. 1 stick of butter. Melt butter. Pour batter over butter. Pour fruit on top. There you go.
