I made this Minestrone Soup the other weekend because I had a fridge full of veggies needing to be used and the kids always love Minestrone Soup.
It's the perfect vessel for sneaking extra veggies into the kids and a meatless meal into Colt. I swear my husband thinks he's going to wither away every time he knows somethings meatless. He actually questioned me when I was making the soup about the lack of meat since we were cooking dinner together. I had to reassure him he wouldn't miss the meat and I always make it like this.
The look on his face pretty much said he was sure I was starving him but by the time he had the soup he completely forgot about the lack of meat and devoured the leftovers the next day for lunch. Since one of our family favorite recipes is Cajun Chicken Pasta, I decided to simplify it into a One Pot Cajun Chicken Pasta that is done in under 25 minutes.
I loved transforming this family favorite into a quick and easy comfort food recipe perfect for a quick meal on a busy weeknight or easy dinner for company.
By using the starch in the pasta as a thickener for the sauce it reduced additional calories by not having to add flour. I also used half and half over traditional heavy cream to lighten the dish.
If that wasn't good enough, this dish only requires one pot to make, keeping dishes to a minimum!

A favorite summertime Pasta Salad recipe we love in our house is White Bean Salami Pasta Salad. It's one of a dozen go-to variations we love to make.
It's delicious served cold on a hot day for lunch, dinner or a hearty side. It's better made the day before if time allows because the flavor only improves after being refrigerated. White Bean Salami Pasta Salad is one of those dishes the whole family calls dibs on the leftovers.
White Bean Salami Pasta Salad is loaded with Cannellini Beans, Primo Tagilio® Italian Dry Sliced Salami, Rotini Pasta, Primo Tagilio® Fresh Mozzarella Cheese Ball, Bell Pepper, Cucumber, Grape Tomatoes, Diced Artichoke Hearts, Red Onion, Chopped Spinach, Basil, and drizzled with a fresh herb red wine vinaigrette. I then topped with with Primo Tagilio® Shaved Parmesan Cheese for one more layer of flavor.
We frequently make it for summer picnics at the lake, or to take with us to potlucks, and barbecues. It's one of those dishes that always goes fast, and that everyone loves.

Shrimp has been long over due for a new picture but every time we enjoyed it for dinner I lacked enough light outside by the time dinner was done and I couldn't find a better excuse to make this easy recipe for dinner then I needed to update the picture.
I almost always have the ingredients on hand to make this Shrimp Scampi with Pasta.
Shrimp Scampi is a delicious meal in under 30 minutes, perfect for a busy weeknight yet I make this quite often for company too.
I just adore quick easy dinner recipes.
We made Mediterranean Couscous Pasta Salad awhile back to go with Greek Chicken. It's an easy go to pasta salad for all the summer barbecues, picnics, and potlucks that happen.
I used the larger Israeli Couscous or also known as Pearl Couscous, because I prefer the larger texture for pasta salad. Israel Couscous is the size of small pearls when cooked, and is usually made from wheat flour or semolina flour.
To cook Israel Couscous it is boiled unlike regular Couscousthat's steamed.
I made a herbed vinaigrette to dress the Couscous Salad. I then added kalamata olives, capers, sun-dried tomatoes, artichoke hearts, garbanzo beans, cucumbers, bell pepper, spinach, and fresh herbs.
It's very similar to our other favorite Mediterranean Pasta Salad that was featured in Better Homes and Gardens in the July issue with just a few small changes.
Definitely a family favorite that never lasts long.

But we love it with Balsamic Steak Shish Kabobs, Yogurt Marinaded Chicken Skewers, Lemon Garlic Shrimp, or Sun-dried Tomato Spinach Artichoke Stuffed Baked Chicken.
Couscous is great with heart robust stews and definitely deserves a spot on the dinner rotation menu.

Clams with Linguine Sauce

We stopped at the grocery store on the way home from the kids basketball game to pick up fix-in's to make BLT's for lunch and L.J. spotted $3 a pound clams on sale.
He begged and pleaded for us to make Clams with Linguine in a White Wine Butter Sauce for dinner.
Who could blame him? Not me.
We enjoyed this as an early lunch yesterday after church.
I forgot just how much I love the clam spiked noodles with the creamy white wine butter sauce. Slurp..
It's quick enough for a nice lunch or easy weeknight dinner, but elegant enough for company.
The kids were circling around Colt yesterday afternoon like little vultures once lunch was done.
I think we pushed them past the point of patiences. Colt was trying to plate the pasta plus get a picture, so I finally stepped in and served the kids in an effort to avoid chaos from breaking out in our kitchen.
Hungry kids = Cranky kids.

Chicken Enchilada Pasta Skillet is the perfect dinner after a busy day. It's made all in one skillet, and done in under 30 minutes.
I've been working on a skillet revolution lately because I hate always having a never ending pile of dishes growing in the sink plus, some nights dinner done in under 30 minutes leaves me jumping for joy.
Chicken Enchilada Pasta is a super easy one skillet dinner recipe using chicken breast, but hamburger could always be substituted. It's a perfect dinner for a busy weeknight in under 30 minutes.
The one thing I always loved about Hamburger Helper was the one skillet to clean, and how easy it was to make.
No one should have to fill the dishwasher multiple times per day, unless you have 10 kids then I am so sorry for the dishes and laundry, I can only fathom how crazy this drives you. Just the thought makes me want to pull the hair out of my head.
Chicken Enchilada Pasta Skillet is made totally from scratch, easy to make, no canned enchilada sauce needed, and tastes amazing!
It's a perfect combination of two of my favorite things pasta and enchilada's all in one perfect dish.

One Pot Chicken Cordon Bleu Pasta the best thing ever since sliced bread.
I adore Chicken Cordon Bleu, but this easy skillet dinner takes it to a whole 'nother level. Chicken and ham are cooked in a creamy gruyere sauce, with Egg Noodles, and finished with a crunchy panko topping.

Asian Noodle Chicken Vegetable Salad with Chile Scallion Oil
Tuesday, August 1, 2017The original recipe came from Epicurious, I made a few adjustments to make this a favorite with the whole family including adding extra veggies, since we can never have enough, and a minor tweak to the Chili Scallion Oil to keep the heat at a medium burn.
I was actually praying Colt would forget the leftovers for lunch, but he was on it, and said it only improved on day 2. I can't wait to make it again, the kids have asked to take it for lunch when they head back to school. I seriously can't live without the Chili Scallion Oil, the star anise adds a wonderful flavor, and leaves the house smelling delicious!
If you have members of your family who don't like the heat serve the Chili Scallion Oil on the side. It was even delicious without the Chili Scallion Oil but it really adds some nice complex flavors to send this salad over the top!

Italian Chicken Pasta Salad with Basil Vinaigrette is probably one of the most popular summertime dinners we make! A cold but heart pasta salad is the perfect ending to a hot summer day and it usually produces enough salad for leftovers the next day. It's one of those dishes the family never tires of and is always a favorite at summer barbecues and picnics. The Basil Vinaigrette adds a wonderful depth of flavor to this salad. Even the kids just can't get enough.
Since we eat Italian Chicken Pasta Salad with Basil Vinaigrette at least once a week when the weather is hot I figured it was long overdue for new photos and a few updates to the recipe.

I love, love, love this Mediterranean Pasta Salad for our road trips, picnics and adventures since it's meatless yet chock-full of goodies like arugula, garbanzo beans, artichoke hearts, kalamata olives, capers, sun-dried tomatoes, mozzarella cheese tossed with a fresh herb vinaigrette.
It's pure deliciousness in a bowl!
If garbanzo beans aren't your flavor try subbing with cannellini beans aka white kidney beans.
I usually make this when we go camping as our first lunch or dinner since there's so much work to do setting up camp and getting organized it takes the stress out of fixing a meal. It can be packed into Mason Jars for easy individualized servings on the go.
Mediterranean Pasta Salad is best made the day before to allow the flavors to meld and pasta to absorb the dressing making it easy to grab and go on your way out the door.
It's so, so, so good I know you'll love, love, love it too!

Cheese Tortellini, Red Bell Pepper, Tomatoes, Red Onion, Cucumber, Olives, Artichoke Hearts Cheese, and Spinach are tossed with a delicious homemade Italian Vinaigrette.

Italian Cheese Tortellini Pasta Salad is great as a main course on a hot day or an easy side dish for a crowd. It's a go to cold pasta salad recipe and the homemade Italian dressing makes this so delicious after a few hours in the fridge.
I love the crunchy tomatoes, cucumber and bell peppers paired with artichoke hearts, olives and the cheese filled tortellini's then drizzled with an easy homemade italian dressing.
Once in awhile I'll also add a chopped chicken breast or salami but this dish is hearty enough on it's own.
