Snowball Cookies Recipe

One of our all time favorite Christmas Cookies that are super easy to make are these Snowball Cookie recipe.

They are super butter, sugary, and a little crumbly as you bite into them. They sort of melt in your mouth as you eat them. 

I like to add chopped nuts, but of course that's complete optional. 

Over the years I've learned they go by quite a few names including Russian Wedding Cakes, Mexican  Wedding Cakes, Butterballs and of course Snowballs. The last being that they are pure buttery sugary goodness.

Whatever you call them really doesn't matter as long as they get in my belly! 



The first time I posted the recipe for Snowballs was December 11, 2011. It's amazing how much my photography skills improved by the following year.


Cream together:
  • 1 cup Softened Butter
  • 1/2 cup Powdered Sugar
  • 1 1/2 teaspoons Pure Vanilla Extract

Snowball Cookies Recipe batter. Beat butter, sugar, and vanilla until smooth and creamy from Serena Bakes Simply From Scratch.

Until smooth and Creamy. Scrape sides of bowl well.

Snowball Cookies recipe dough add flour to butter, powdered sugar mixture from Serena Bakes Simply From Scratch.

Add:
  • 2 cups All-Purpose Flour 
Scrape down sides of bowl. Mix until fully incorporated.

Snowball Cookie Batter mix in nuts from Serena Bakes Simply From Scratch.

Add 1/2 cup Chopped Nuts and mix until evenly distributed.

Snowball Cookies recipe roll tablespoon size pieces into balls from Serena Bakes Simply From Scratch.

Drop dough by tablespoon that is rolled into balls or using a cookie scoop onto an ungreased cookie sheet.

Bake for 12 minutes or until no longer soft when top is touched. Allow to cool on the cookie sheet.

Dust cookies with powdered sugar when cool and remove to a sealed container for storage.

ingredients:


  • 1 cup Butter, Softened
  • 1/2 cup Powdered Sugar
  • 1 1/2 teaspoons Vanilla
  • 2 cups Flour
  • 1/2 cup Nuts, Chopped ( I use walnuts or pecans)
  • Additional Powdered Sugar For Dusting

instructions


  1. Preheat oven to 350 degrees.
  2. Cream butter, sugar and vanilla, until smooth and fully incorporated. Add Flour and nuts. Beat until fully incorporated and smooth.
  3. Drop dough by tablespoon that is rolled into balls or using a cookie scoop onto an ungreased cookie sheet. 
  4. Bake for 12 minutes. Cookies are done when top is touched and cookie is no longer soft. Allow to cool on the cookie sheet.
  5. Dust with powdered sugar, and store in a sealed storage container.
