You guys, if you love artichokes as much as I do, and you've never had a lemony garlicky Oven Roasted Artichoke; let me tell you, you're missing out MEGA! 

Colt knows I absolutely adore artichokes, so he purchased a few for Mothers Day. We decided to roast them with lemon, and garlic. It was like a dance party in the mouth.

They would be great as an appetizer, or side, but we like them just because. I really don't need an excuse to enjoy these!

I made this Hot Spinach Artichoke Dip last Sunday and boy was it good! It's always a favorite dip in our house and a favorite Thanksgiving and Christmas appetizer right up there with Hot Crab Dip.

Hot Spinach Artichoke Dip is a highly request dip to bring to any party which I love because I almost always have everything on hand to make it on a whim. It's so easy we will even make it on the weekends to enjoy while watching football.

If I happen to have some Fontina Cheese or Italian Cheese Blend I will sometimes add some of it with the Parmesan Cheese just to make sure it's extra cheesylicious.

I also almost always added some pickled jalapeños for a little heat and bite. You can skip the jalapeños if you prefer or most grocery stores carry mild pickled jalapeños. On the other hand you can always add more if you like it extra spicy.

I love to make it ahead of time to keep it simple for entertaining as it can be prepared and stored in the refrigerator overnight to save time. Just heat and serve when ready.

We like to enjoy Hot Spinach Artichoke Dip with sourdough bread, crostini, chips, or crackers.

Lemon Herb Shrimp

Lemon Garlic Herb Shrimp always reminds me of my Granny, she would make something similar, and serve it over fresh spinach noodles in a garlic butter sauce. It was always one of my favorites! 

We cook Lemon Herb Shrimp a few different ways dependent on the season and our mood. 

They can be barbecued in a stir fry basket for the grill, or if we have time I will skewer them for easy portion control, because the kids always count who has how many shrimp in our house, and on especially busy nights, or when it's to cold to barbecue, we just toss them in a hot pan until the shrimp turn bright pink. 

No matter how you choose to cook the shrimp, the secret to tender shrimp is to cook them only until they turn bright pink. Avoid over cooking or they have a tendency to become tough, and rubbery.

This recipes great for an easy weeknight dinner, served as an appetizer, or main dish, you can't go wrong.

I decided to update the recipe card, and re-share this recipe since it's a family favorite. When I originally shared this Tomato Basil Soup with Cheesy Bread Georgia Pellegrini remade this recipe on Tasty Kitchen. It's still such a huge honor she made my recipe. I'm sure you'll love it as much as we do.

This soup comes out of a love for Tomato Basil Soup and Cheesy Bread. Sometimes I just need a quick healthy weeknight meal and this is it!

I love Tomato Basil Soup but my kids have a strong dislike for grilled cheese well 2 out of 3 kids. This happened thanks to my Dad. He had babysat the kids a few years back while we went out of town and his specialty is Grilled Cheese. When I say specialty I mean they went through a lot of cheese, like 2 2lb blocks of cheese with in 5 days.

Yes I meant a lot of cheese..

At least my kids were fed well even if they did have to consume a lot of high fiber food upon my arrival home.. I won't go into details I think you get the idea..

This however hasn't hindered their love of Cheesy Bread..

Blueberry Mango Salsa

The first time I had Blueberry Salsa was over Fish Tacos when Colt and I were having a date night and I instantly fell in love with the sweet blueberries paired with the spiciness of the jalapeño, and cilantro. There's something about good food that just lingers in my mind making it hard to forget, and this Blueberry Mango Salsa is one of those you won't quickly forget!

So for Sundays big game I made Blueberry Mango Salsa, to go with the Fish Tacos Colt made. It's also a favorite when we make Quick Shrimp Tacos or even Breakfast Burritos! We also like to keep it in the fridge as a healthy snack, and it makes a great topping for chicken, and fish.

How To Assemble The Ultimate Cheese Plate with 13 different Dips for the holidays!

With Thanksgiving almost upon us I thought I would share a few of my favorite tips, and tricks, to assemble The Ultimate Cheese Board with 13 Favorite Dips. There's something fun and exciting about the revealing of a gorgeous arrangement of snacks at gatherings. People love to nibble while waiting for dinner, and a well arranged Cheese Platter can keep everyone content even if delayed.

When assembling a Cheese Tray I usually aim for 2-4 different varieties so there's something for everyone. The first cheese I choose is something simple like an aged cheddar, or on this occasion we used a Dill Havarti. The next cheese or two can be something a little more daring, if you like to try new things. I had made an Herbed Goat Cheese Spread on this occasion, the creamy texture makes a wonderful addition to the meats and cheeses.

Once I have decided on cheeses I move on to adding 1-2 Meats like Salami, Coppa, or Prosciutto. I also limit bread and crackers to 2-3 options, or it can simple become to much. I will also usually choose a favorite dip or two, if we are feeding a crowd.

Finally I choose fillers like dried or fresh fruit, nuts, vegetables, olives, and pickles.

I like to use a large wooden board or marble slab to arrange everything for simple nibbling.

Brrr... It's been rather chilly the last few days, leaving me craving any kind of hearty soup. I love Ham Black-Eyed Pea Soup with Collard Greens since it's thick and creamy. The perfect comfort food on a cold day.

If your lucky enough to have leftover ham after the holidays Ham Black-Eyed Pea Soup with Collard Greens is a favorite use in our house, and a must have for  New Years Day. I like adding the sautéed collard greens to the top for an additional pop of flavor.

According to superstition Black-Eyed Peas will bring you prosperity in the New Year. I'm not one to mess with tradition when it entails a hearty bowl of comfort.

We love Olives in our house and Black Olive Tapenade is a favorite to spread on sandwiches or over crostini with  Herbed Goat Cheese Spread. It's wonderful as a light lunch or an easy appetizer for company. 

I find the Black Olive Tapenade a little more kid friendly then some of the other version, and the kids enjoy it as much as we do. 

By using black olives and rinsing the kalamata olives it helps to keep the Tapenade from being bitter. 

It can be made a day ahead of time and refrigerated to allow the flavors to mingle, making it perfect for holiday entertaining. It pairs deliciously with meat, cheeses, wine, and is perfect for your next Charcuterie or Cheese Board

Colt's pretty much the Onion Ring connoisseur around our house. 

Whenever we go out to eat if Onion Rings are on the menu he's ordering them. So I know when he says these are the best, he knows what he's talking about.

He built his case as follows:

  1.  It's all about the light and crunchy seasoned coating- this is accomplished using panko bread crumbs. 
  2. Nice thick slices of sweet white onion- we find Walla Walla or Vidalia Onions perfect for this.
  3.  Not overly greasy in a heavy soggy shell - two huge pet peeves when ordering Onion Rings. 
I have to agree with him on all these points. There's really only 1 other place in our area that even come close to these little mouthfuls of heaven, making it well worth learning how to make Homemade Onion Rings!

Even though this Smoked Salmon Dip recipe sounds fussy it's rather easy to make in under 10 minutes. The flavors only improve after refrigerating overnight, if time allows, but is still delicious served immediately. Dill Smoked Salmon Dip is not only perfect for picnics but great for barbecues and parties! It never lasts long.

Beaten cream cheese with sour cream, chopped dill, chopped chives, fresh lemon juice and salt added for smoked salmon dip.

Beat 8 ounces Cream Cheese until smooth.

Add:
  • 1/2 cup Sour Cream
  • 2 tablespoons Chopped Fresh Dill
  • 2 tablespoons Chopped Fresh Chives
  • 2 tablespoons Fresh Squeezed Lemon Juice
  • A Generous Pinch of Salt
Mix until well combined, scraping sides of bowl frequently.

Smoked Salmon added to herb cream cheese mixture for Smoked Salmon Dip.

Add 1 cup Chopped Deboned Smoke Salmon and mix until well combined. Refrigerate until cold or overnight to allow the flavors to develop. 
Smoked Salmon Dip in a white bowl topped with chives and dill.

Garnish Dill Smoked Salmon Dip with additional Dill and Chives if desired.

We are celebrating National Grandparents Day for this weeks #SundaySupper. In memory of my sweet Granny because she was simply one of the most amazing people I've ever met I decided to share my rendition of her famous Homemade Clam Dip.

Grannies Clam Dip isn't actually her recipe since she passed away before I had the opportunity for her to share it with me but my version of a dip she made often for a weekend snack served with ruffled potato chips and lots of veggies.

It was as much a staple in our home as Puff Pancakes and Homemade Chicken Noodle Soup. It was always a favorite and never lasted long enough.

I choose to name it Grannies Clam Dip since I knew it would pass the test of her picky palate and when I think of Clam Dip I always think of her clam dip.

Some people idol a celebrity or super hero but to me my Grannies is the one I admire.

She was amazing, strong, loving and kind.

Granny set the foundation for my love of the kitchen with all the amazing recipes she served.

Her heart was as beautiful as they come with patience I can only hope will come with age. She was always so unselfish and giving in every way imaginable!

She spent endless hours helping me grow into the person that I am today.

Sausage Stuffed Mushrooms
Oh my these were so good! 
   You have to make 'em! 
Colt and I assembled these little beauties before yesterdays Seahawks game and they didn't last long.
Even Lorna the proclaimed mushroom hater ate way more then her fair share.
When she was little she insisted on the fact she hated mushrooms so I would add them to things like a brown rice and shiitake mushroom soup and tell her they were calamari..
She gobbled the mushrooms right up.. Ha..Ha.. 
I'm probably a little bit evil when it comes to food.
 I've converted several of the kids friends to eating more then spaghetti noodles with butter with the simple explanation that to have dinner at our house you have to try a bite of everything.
One of L.J.'s friends still laughs when he has dinner at our house because he discovered he loves salmon..
Ok any who back to the mushrooms...
Colt had set a few mushrooms aside because the boys were at their friends house playing. 
So when they returned they were rather disappointed when they couldn't find the Sausage Stuffed Mushrooms he set aside for them. 
Fast forward about 10 minutes and Colt grabs the leftover Stuffed Mushrooms and proclaims he's eating the last of the mushrooms since the boys didn't eat them.
 Lorna and I both yell no at the same time and say, "The boys were searching all over for those."
 He had these little delicacies  hidden in the microwave, sneaky, sneaky..
Mas devoured the last of 'em.
These were so good I'm about to go out on a huge limb and say these were the best Stuffed Mushrooms I've ever had!
We've ate a lot of stuffed Mushrooms over the years and we all agreed these were over the top good.

We love Hummus in our house. It's a super easy recipe to make for a healthy snack and Chipotle Artichoke Hummus just happens to be our favorite variation.

It's the absolute BEST Hummus to serve on your Charcuterie Board with veggies, pita bread, crackers, or chips for dipping.

It's a deliciously light and creamy hummus with small chunks of artichoke hearts for texture. The smokey chipotle peppers add plenty of flavor with their deeps smokey spicy flavor.

I used canned chickpeas to save time and to keep this easy to make anytime. Almost all the ingredients are pantry staples in our house.
