Moist Pumpkin Bread

Tuesday, October 17, 2023
Easy super Moist Pumpkin Bread is family favorite quick bread recipe. It's a favorite fall quick bread recipe and can be made with either canned pumpkin or homemade pumpkin puree. It has molasses, cinnamon, ginger, nutmeg, and allspice for a delicious fall flavor.

You can make this Pumpkin Bread with or without a mixer. Whole wheat pastry flour can be used for a healthier alternative without effecting the texture or all-purpose flour if that's what you have on hand.

A side shot of a sliced loaf of Moist Pumpkin Bread.
With Fall in full swing I think it's fair to start sharing a few of my favorite pumpkin recipes including this Moist Pumpkin Bread I adapted from Grannies Banana Luncheon Loaf with a few healthier substitution options like coconut oil and whole wheat pastry flour.

I promise you no one will be able to tell the difference with the healthier substitutions.

I'm always craving a slice of Pumpkin Bread recipe this time of year and I think the hardest part to nailing this recipe was achieving the perfect balance of pumpkin spice with cinnamon, ginger, nutmeg and allspice.  It's absolutely the best!

I kept this bread nude but I'm pretty sure it would be delicious smothered in Maple Cream Cheese Frosting if your looking for something on the sweeter side of life.

But for me I'm all for a warm slice of Moist Pumpkin Bread recipe nude with a little bit of butter first thing in the morning with my cuppa.

I know you'll love this recipe too unless your one of those anti-pumpkin people then maybe you should check out this Moist Orange Cranberry Bread with Orange Glaze instead.

Tis the season of endless zucchini from our garden, so I made a loaf of Lemon Zucchini Bread to celebrate!

It was the perfect addition to brunch last weekend. The flavors are bright, and light from the lemon. No one will even realize it's loaded with zucchini, unless they see the little green specks. I'm lucky if a loaf lasts a few hours in our house.

I will usually pre-shred, and measure the zucchini to freeze, so I can make loaves throughout the winter. It's the perfect way to make sure your zucchini doesn't go bad.

If I'm going to be honest the biggest reason I grow zucchini is to make all the different types of breads and cakes like:
It's almost all about the desserts, right? Is that bad?

Never mind don't answer that..

I also make Zucchini and Summer Squash with Ginger quite a bit, which is a simple side if your looking to change things up. The strong flavors pair perfectly with the zucchini.

Are you ready to make this gorgeous Lemon Zucchini Bread? Here's how to make it:

I hope everyone had a fabulous Mother's Day. Colt and the kids sneaked out of the house early in the morning to run to the store and surprised me with a gorgeous bouquet they assembled. It has to be one of the prettiest bouquets I've ever received!

They were a little disappointed to come home and find me awake because the dogs had a dog fight over a bone outside my bedroom door. I still don't know why they were choosing to fight over it because their was a larger bone in the other room, crazy dogs!

Then they assembled a picnic including this favorite Summer Berry Fruit Salad with Honey Lime Glaze and took me to a favorite park next to a lake to enjoy the gorgeous weather we've been having.

This fruit salad happens to be a summer time favorite with sweet raspberries, strawberries, blueberries, kiwi, black grapes, peaches and seedless clementine oranges tossed with lime-honey dressing.

The lime and honey make the flavors of the fruit pop and will leave your taste buds tingling for more.

Homemade Cinnamon Rolls

Friday, November 13, 2020
Homemade Cinnamon Rolls are the best for breakfast or brunch. These are soft, tender, and gooey.

A special strep makes these homemade yeast rolls from scratch the best Cinnamon Roll Recipe!

Worlds Greatest Cinnamon Rolls drizzled with Buttermilk Cream Cheese Icing on a white plate.

It's Monday and my husband had the day off, so I had made the Worlds Best Cinnamon Rolls recipe.

I refrigerated them so we could have hot ooey gooey Cinnamon Rolls this morning for breakfast.

I also might have been buttering him up to help pick blackberries today to freeze and make Blackberry Jam tomorrow.

There is nothing better then throwing some Cinnamon Rolls in the oven and 30 minutes later a life altering event will occur to your taste buds.

I love refrigerating the dough so all I have to do is turn on the oven and throw in the rolls, my eyes don't even need to open yet.

My Granny would make Cinnamon Rolls at least a few times a month growing up and it still brings back warm fuzzes with every bite, yet I was never able to have her recipe as she had passed before I was of age to ask.

I usually make Cinnamon Rolls for Christmas morning and have been working on the ultimate Cinnamon Roll recipe for years and I feel confident enough to share this luscious recipe finally!

After trying just about every Cinnamon Roll I could get my hands on over the years I feel confidently saying these belong on the list of the World's Greatest Cinnamon Rolls.

Tropical Green Smoothie

Friday, September 11, 2020

This is a sponsored post written by me on behalf of Safeway. All opinions are 100% mine.

Tropical Green Smoothie in a glass cup with a slice of pineapple on the edge.

Mason had braces put on last week and his diet has consisted of mainly smoothies since his teeth have been tender. So, I've been making him a lot of these Tropical Green Smoothies to make sure he's still getting plenty of veggies and protein.

The pineapple, mango, kiwi, orange, and banana add plenty of sweetness. Making it easy to slip in some kale and spinach so he's still getting enough veggies.

I've searched for a long time for a vegan protein powder that didn't have a gritty texture and was super surprised when I saw that Open Nature® has recently come out with a Vanilla and Chocolate Plant Based Protein Powder with 21 grams of Protein in each scoop while I was at my local Safeway. Mason usually isn't big on protein powder because of the texture but he's become fond of both to get his protein.

Here's how I make this delicious Green Smoothie recipe:

What could be a better start to any morning than Banana Nut Muffins? Not much in my book.

These are deliciously moist with a lovely banana flavor.

Add a little pat of butter with a cup of coffee or tea and I am in pure heaven. These are a great alternative to making traditional banana bread when you have an over abundance of overripe bananas.

The worst part of making these was my husbands little addiction to wanting to lick the batter. I had to keep shoeing him away like a pesky little fly. It drives me crazy when he wants to eat batter with raw eggs in it.

According to him the batter was divine! For me I will just take his word for it and stick to eating my muffins.

Orange Cranberry Muffins from scratch are tender and moist with plenty of juicy cranberries and orange flavor. These are a holiday favorite recipe for Christmas breakfast or brunch from Serena Bakes Simply From Scratch.

I don't know what it is I love so much about tart little cranberries but boy do I love them especially when combined with orange.

Cranberry Orange Muffins, breads, cakes and cranberry sauce all speak my inner love language.

Colt and I teamed up Sunday morning to make Orange Cranberry Muffins, scrambled eggs and fresh fruit.

These were so good they barely lasted an hour in our house and the kids were circling around the last muffin like little buzzards waiting to devour their prey.

Sadly for them I stepped in and enjoyed the last little cranberry orange laced muffin for myself because I'm the mom and it solved any complaints of unfairness that might arise from who ate the last muffin.

I made these after a little Facebook survey to find out if the frozen cranberries in my freezer from last year were still okay to eat.

Thank the lord for my Facebook readers because after much reassurance I went ahead and used the little frozen gems and they were just as delicious as they were last year.

I couldn't believe they survived a whole year in the freezer without being used...

Sneaky..Sneaky.. Little cranberries!

Here's how I make my Orange Cranberry Muffin recipe:

Orange Cinnamon Rolls will defiantly be on our Easter brunch menu this year and are always a favorite for Christmas morning.

The best part is waking up in the morning to an Orange Cinnamon Roll and cup of coffee to help get the day started.

German Pancakes

Monday, December 31, 2018
German Pancakes, or also known as Dutch Baby Pancakes or Puff Pancakes are a mix between popovers and crepes. They require no leavening agent like traditional pancakes. They are buttery and if topped with powdered sugar sweet. We like to add fresh or macerated berries or fruit compote.

German Pancakes will quickly become a favorite weekend breakfast recipe.

A down shot of a German Pancake in a cast iron pan dusted with powdered sugar and topped with sliced strawberries.

German Pancakes, Dutch Baby Pancakes or Puff Pancakes as they are frequently known in our house are simply delicious no matter what you call them.

They are relatively easy to make and have an interesting texture. They don't have a leavening agent like traditional pancakes and the texture is definitely different. It's much more similar to a hybrid of a sweet popover and a little thicker then a crepe on the bottom.

Dutch Baby Pancakes are super easy to make. They are usually reserved for the weekends around our house, but my Granny had whipped one up each morning before school for a whole year. They do require about 20-25 minutes in the oven which is the hardest part. We easily could eat these every day of the week and never tire of them.

They can be made in a cast iron skillet but we also use pie plates regularly when we are making multiples. I can usually fit 2 German Pancakes in the oven at a time with pie plates.

We like to dust our German Pancakes with a little powdered sugar and fill with a little fresh fruit. However you serve them and whatever you call them they will quickly become a breakfast favorite in your house too!

Colt came home with the most amazing peaches the other day. They were so juicy they were running down my arm as I peeled them. Perfect for making Peach Crumb Muffins.

Tara from from Noshing With The Nolands had sent a message awhile back after she had a reader who had made my Banana Crumb Muffins I had shared on her site a few years back, and loved them so much she asked for a Peach Crumb Muffin recipe.

It's my all time favorite peach muffin recipe. A soft tender cake like muffin with a coffee cake like crumb. They are a favorite way to start the day with my morning cup of coffee or tea.

Between the perfectly ripe peaches on the counter, and Tara's request I knew I had to share the recipe.
